Famous Chef José Andrés Shows How Spain Makes Amazing Egg Dishes
The Marvel Comics hero and restaurant owner teaches people about Spain's special way of cooking eggs with olive oil.
Chef José Andrés visited the Los Angeles Times Test Kitchen last month to teach people about Spanish cooking. He is famous for his restaurants and for helping people during disasters through his organization World Central Kitchen. Marvel Comics even made him into a superhero character. During his visit, he showed how to make special Spanish egg dishes that are different from regular omelets.
Andrés was feeling sad during his visit because his friend Aglaia Kremezi had died the week before. She was like a grandmother to him and helped him learn about Mediterranean cooking. Even though he was sad, Andrés still wanted to share his love of Spanish food with others. He is known for being both serious about helping people and funny at the same time.
The chef has written a new cookbook called 'Spain My Way: Eat, Drink and Cook Like a Spaniard.' The book has many different types of recipes, from simple ones to very fancy chef techniques. Some recipes use spherification, which is a way to make liquid olives that look solid. Spain is famous for both simple cooking over wood fires and some of the world's most advanced cooking techniques.
In Spain, people love eggs and cook them in many special ways. Andrés explained that Spanish people are obsessed with eggs, pointing to a famous painting from 1618 that shows an old woman frying eggs. The painting shows how Spanish people have been cooking eggs the same way for hundreds of years. They use shallow pools of olive oil, hot clay pans called cazuelas, and careful watching to make perfect eggs.
These are my favorite eggs in the whole world.
